Saint David was a 6th-century monk, preacher, and bishop who played a vital role in spreading Christianity throughout Wales. His followers adhered to simple living—eating only vegetables and drinking only water. In fact, legend says that Saint David himself lived on a diet of leeks and water, which is why the leek remains a national symbol of Wales today.

One of the most famous stories about Saint David tells of him preaching to a large crowd when the ground beneath him miraculously rose, forming a hill so that everyone could see and hear him. This divine moment solidified his status as a holy figure, and after his death, he was canonised by Pope Callixtus II in 1120. Since then, Saint David’s Day has been an essential part of Welsh identity and culture.
